Soft Gingerbread Cookies Recipe

Prep Time: 40 mins.

Bake Time: 10 mins.

Total Time: 50 mins.

Yield: 3 dozen large cookies

 

Ingredients

  • 1 cup of unsalted butter, at room temperature

  • 1 cup granulated white sugar

  • 1 egg

  • 1 cup of light or dark molasses

  • 2 tbsp of white vinegar

  • 5 cups of flour

  • 1.5 tsp of baking soda

  • 0.5 tsp of salt

  • 2 tsp of ground ginger

  • 1 tsp of cinnamon

  • 1 tsp of ground cloves

Let's get baking!

  1. Cream butter by gradually adding sugar. Beat until well combined--it should be light and fluffy.

  2. Beat in egg molasses and vinegar.

  3. Sift all dry ingredients together and then blend with the wet ingredients.

  4. Divide the dough into two even pieces, wrap each piece in plastic wrap and refrigerate for 30 - 90 mins.

  5. Preheat the oven to 350 degrees, when the dough is ready. Roll out the dough (about 0.5 inch thick). Cut out shapes!

  6. Bake at 350 degrees for about 9 - 11 mins. Let cool for 5 mins. then move to the cooling rack. 

  7. Enjoy!
